This Chilean Chardonnay is yellow and soft with a brilliant color that lights up the room. On the nose, this sparkling has aromas of pineapple, banana, and toasted almonds that put you right on the beach. On the palate the wine is round with a good structure and presence and unravels to reveal a nice balance between oak and fruity flavors with a long and creamy ending.
The Chardonnay that makes up this Chilean sparkling goes through precise and careful harvesting, crushing, maceration, and fermentation processes that create its bold character. The wine is then stored and aged for 5-6 months to develop its complexity and structure.
Try this sparkling with pork chops, smoked ham, poultry, grilled salmon, pasta, oyster stew, and roasted pimentos. Pajarito is also excellent with Caprese salad and smoked salmon.
